Celebrations & Cake
Like most, we missed many a birthday and celebration to the pandemic. Lucky me with an early spring birthday, I had not one or two, but three pandemic birthdays. When it came time to celebrate a friend’s birthday this year, in person, it was only fitting we do it right with birthday cake.
This is a Black Cocoa Cake + “Notella” + Chocolate Ganache Swiss Buttercream
The black cocoa cake is a gluten and dairy free recipe I’ve developed using black cocoa that’s wonderfully dark and rich and a lot like a classic devil’s food cake but with no gluten. A few of the secret ingredients? Avocado oil, espresso, and really good apple cider vinegar.
The “Notella” is my homemade version of Nutella where the primary ingredient is still hazelnuts made with coconut oil and a little avocado oil – no palm oil, soy or dairy.
The cake is finished with some gluten free macarons, cacao nibs, gluten free white sprinkles, and, you guessed it, some gold lustre!
