Churro Cake!

Cinnamon Cake + Churro Buttercream + Mexican Spiced Chocolate Ganache.
The cinnamon cake is made using a lighter version of the cake recipe I use to make my salted caramel cake, with less brown sugar and a hefty dose of cinnamon. I sprinkle cinnamon sugar (made with canela - Mexican cinnamon - and Lakanto's golden monk fruit sugar) on the buttercream layers for an extra churro punch between cake and churro cream cheese buttercream layers.
On top of the cake is a flood of spiced Mexican chocolate ganache. And on top of that is more of that churro cream cheese buttercream with The Daily Crave's Beyond Churro bites that are grain, gluten, soy and dairy free.
I was also testing out a new vegan cream cheese buttercream here. If you look too close, you'll see all of that extra moisture in the vegan cream cheese made my buttercream break irreparably, no matter what I tried to pull it back together, but damn was it good. I love a tasty experiment and problem to solve!
