Paleo Carrot Cake with Maple Tahini Italian Buttercream

Still munching on one of last weekend's paleo carrot cake jars because they're that delicious. And because I'm really into carrot cake. These are this week’s Cake of the Week – Paleo Carrot Cake + Maple Tahini Buttercream Cake Jars finished with Toasted Coconut & Pecans.

If you’re planning ahead, next week’s COTW is Rainbow Vanilla Bean Cake + Strawberry or Plum Balsamic Coulis + Vanilla Buttercream, finished with a white chocolate drip and rainbows to celebrate Pride. Cake pick up is on Friday 6/10 between 1-3pm and Saturday 6/11 between 12-2pm, The COTW is available as a Cake in a Jar ($20) / 4" three layer ($65) / 6" three layer ($115) / 8" three layer ($160)

Back to carrot cake! This paleo carrot cake is dairy, refined sugar, grain and flour free. It’s made with a base of almond flour, coconut flour and freshly grated organic carrots. Studded with juicy sultanas and raw pecans.

The super glossy grade A syrup based maple and tahini buttercream is also divine and perfect in these Cake Jars. The cake and buttercream are made using Pepperwood Organic’s Whole Seed Stone Ground Tahini which is made with the whole sesame seed (vs hulled like most tahini on the shelves) which means 5x more calcium and 2x more iron. The tahini addition gives the cake and buttercream a subtle earthy undertone and a superfood punch.

Can we also talk about peony season?! These are one of my favorite flowers and we’re enjoying the short window they’re available here. These blooms started out fist size and shades of pink and over the course of a week exploded to the size of my head and slowly faded to white. There’s no greater creative inspiration than nature and I’m endlessly inspired by blooms.

I’m gearing up for a bunch of baking this week for some custom orders (earl grey London Fog, Black Sesame Matcha, and Black Cocoa birthday cakes this weekend) plus a big rainbow themed cake for our town’s first ever Altadena Pride Walkabout & Festival this weekend.
