Celebrating Pride with a Plant Dyed Superfood Rainbow Cake
Loved making this superfood rainbow cake to share with our community at the first annual Altadena LGBTQ+ Pride Walkabout and Festival this weekend!
This vanilla bean cake is made of two six layer tiers - a 6” cake on top of an 8” cake and and finished with vanilla bean buttercream, wafer paper butterflies and a peony flower.
As always gluten, refined sugar, artificial coloring, and junky stuff free. The rainbow layers are colored with plants. The bottom purple layer is colored with açaí and black carrot; the blue layer is colored with butterfly pea flower; the green layer is colored with spirulina; the yellow layer is turmeric; the orange layer is marigold and turmeric; and the red layer (which is more of a pink when you’re using natural plan colorings) is beet root.
The cake was presented and then sliced and served at the sweets table I got to share with some other local woman owned micro businesses including Altadena Cookie Co, Stems Charcuterie, Kat’s Macarons, Flour and Heat, and Fudge My Life Kitchen – whose fudge we’ve bought for gifts in the past and love!
