Pretty in Pink Birthday Cake
Back to baking this weekend with a birthday cake for a sweet friend and neighbor whose sister and I went to junior high school together here in LA many, many moons ago.
This is Vanilla Butter Cake + Strawberry Swiss Buttercream + Vanilla Bean Swiss Buttercream.
6" and three layers filled with a strawberry compote made with fresh organic strawberries, homemade strawberry preserves, Séka Elderberry Balsamic Vinegar and Buzzed Honeys's hyper local Altadena honey.
All of my cakes are gluten free, celiac friendly and made in a dedicated GF kitchen, but the recipient of this cake was both gluten free and allergic to nuts so the cake and buttercream were both made entirely with Vital Farms’ grass fed butter instead of my usual hybrid or vegan dairy and without any milk, dairy, nut or otherwise.
Simple semi naked finish to let the strawberry and vanilla buttercreams shine, plus organic fresh strawberries and pansies, and a couple of strawberry blossoms, sweet alyssum blooms and mint sprigs from the garden.
